Salam Jakum
Before being reported to the animal rights groups I feel I should provide a vegetarian dish that can be made by our friend in Sudan who was angry about the sour cream and the avocados.
Vegetarian rigla (or its substitute the spinach for those who can not get the real McCoy)
Ingredients:
1. 5 large spoons of vegetable oil (you can use any type but sunflower and groundnut are the best)
2. 3 large spoons of lentils (Adas)
Three large onions
3. 4 medium size tomatoes
4. 1 kg of rigla or a pack of 500g shredded spinach (only shredded spinach not whole or cut spinach)
5. Spices (including garlic) and salt according to taste
6. Tomato puree (see the comments later)
Procedure:
1. Wash the lentils under running water until the water becomes clear
2. Cut the rigla roots and throw them away (you do not need to do this with the shredded spinach)
3. Shred the rigla into small pieces (in the West you can buy the spice shredder which is miniature form of famous ‘maframat almolokhia’)
3. Shred the onion into small piece (and I mean small pieces)
4. Shred the tomatoes into small pieces
5. Heat the oil in a non-stick pan
6. Add the shredded onion and keep stirring until the onion pieces become soft
7. Reduce the heat then add the lentils (no water) and cover the pan – do not run to the messenger and keep watch to ensure things are not burned.
8. Keep heating (and stirring) until the lentils become soft.
9. Add the shredded tomatoes and keep stirring until the tomatoes become soft.
10. Add a little bit of the tomato puree (about two tea spoons) and mix thoroughly
11. Add the shredded rigla (or the shredded spinach)
12. Add the spices and salt
13. Mix the contents thoroughly then add about 200 ml of water (half a cup)
14. Leave to simmer over medium fire for about half an hour but keep a watch
15. At this point you should check the consistency and the taste using a mall spoon. If you feel it is too runny then add more tomato puree and keep it simmering.
If after tasting you feel more salt is needed then add some but be careful.
Keep the mixture simmering until you get the consistency you like.
Serving:
You can have it with rice or bread in whatever form you want.
Some of you may like to add stock cubes (your spice mixture may make this unnecessary).
If you got a fatty taste then at the end you may add oil or ghee (samna) while the dish is hot; I won't.
But before saying good night I got to say to Samah that Inti bigaiti fashank. Despite the talk we are still waiting for your dish!
